Lemon Meringue Kisses

(Gluten-free, gout-friendly)

Ingredients

  • 2 egg whites

  • 1/2 cup artificial sweetener

  • 1/4 teaspoon vanilla

  • 1 tablespoon lemon curd*

Directions

Preheat oven to 300°F. Prepare baking sheet by spraying with nonstick cooking spray or lining with silicone baking mat.

Beat egg whites until they begin to hold a soft peak. Gradually add artificial sweetener and continue beating until egg whites form stiff peaks. Beat in vanilla.

Drop by teaspoon onto prepared baking sheet—or pipe the meringue from a pastry decorator. You should get 2 dozen kisses. Bake for 25 minutes. Make a small indentation in each kiss and drop in a dab of lemon curd.

*Look for commercially prepared lemon curd in the supermarket next to the jams, jellies, and preserves. If you can't find lemon curd, you can substitute lemon pie filling.
